For home-made pie crusts with the convenience of ready-made, make a bunch of crusts when the mood grabs you, and put them in the freezer in a big plastic bag.

1 cup flour
1/2 cup light brown sugar
1/2 cup butter
Combine flour and brown sugar in a mixing bowl. Cut butter into this mixture until crumbs the size of small peas form. Cover pie with topping; use your hands to pat it on snugly and completely cover apples. Bake until deep golden brown, about 45 to 55 minutes.

1 1/2 cups flour
1 teaspoon ground cinnamon
3/4 cup brown sugar
3/4 cup (1 1/2 sticks) butter
For the crumb topping, place the flour, cinnamon, and sugar in a large bowl and cut in the butter with a pastry blender or two knives until the mixture has the texture of coarse cornmeal. Sprinkle the crumb mixture on top of the apples.

In a small bowl mix together 1/2 cup flour and brown sugar. Cut in 3 tablespoons butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.
